Last Friday we made banana choc muffins and they were good.
The ingredients were as followed.We also had to substitute somethings if i say them and it is not the recipe you used we substituted somethings.

2 c self raising flour
½ t salt
½ c caster sugar
100g margarine
1 c of soy milk
1 egg
1 c mashed banana's(2-3)
- mix flour,salt,caster sugar & chocolate bits in a bowl.
- in a separate bowl melt margarine then add soy milk and egg and beat to combine.
- mash and combine bananas and add to liquid ingredients.
- tip liquid mixture into the dry ingredients.fold carefully.DO NOT OVERMIX
- carefully spoon muffin batter into prepared muffin tins (line with paper muffin cases)
- optional topping: mix 1 t sugar & ½ t cinnamon and sprinkle over top of muffins. drop some chocolate bits on each.
- bake at 220c for 12-15 then fan bake,testing to check if muffin is cooked poking a skewer if no batter is on it cooked. cool for 2-3 mins before removing from pans
Hi Brayden. I am pleased your muffins turned out well. I am also pleased that the anger in the group were over come. I am wondering if the soy milk affected the taste? Did you compare yours to the rest of the class?
